Vistal, the Baja-inspired hotspot at InterContinental San Diego, is teaming up with local sustainability champions Chula Seafood for a one-night-only Swordfish Dinner.

Jerry Skakun, who runs the beverage operations at Vistal at the InterContinental San Diego, is based in California, so he gravitates to West Coast bottles for his Aviation variation. “I love Gray Whale Gin, which is distilled and bottled in Sebastopol,” he says. “The gin uses an array of California botanicals offering a unique set of flavor profiles ideal for blending and making cocktails.”

We’re taking our taco game up a notch at Vistal. With San Diego Bay as our backdrop, we’re diving into their Red Widow Rockfish Fish Tacos. The local rockfish gets a funky purple makeover thanks to squid ink tempura batter. Topped with grilled corn, cotija, and aji verde sauce, it’s a flavor explosion.

Garibaldi, the bayfront rooftop restaurant located on the third floor of the InterContinental San Diego, highlights the flavors and essence of Sardinia and Sicily through the lens of San Diego in terms of local sourcing and cocktails to create an experience seen nowhere else in the city.
